One of my favourite things about spring is the opportunity to add more fresh, colourful vegetables to my day. There’s no better way than with crisp romaine, sweet peas, bright tomatoes and peppers in this spring cobb salad.
If you’re someone who doesn’t typically like “salad,” are you thinking of the wilted, bagged salads in the clearance section of the grocery store? Or the iceberg lettuce and stringed carrot side dish at a restaurant? These are unsatisfying and not very filling!! I love to pack all the nutrition I can into my salads; this way, they are not only yummy but also satisfying and will help keep you full for hours.
Makes 1 salad
Instructions: Put all ingredients into a small jar or container and shake well to incorporate. Use a very small amount of water to thin if needed.
Salad Assembly: Add all salad ingredients to a large bowl (if you’re doubling or tripling the recipe assemble your veggies, except for avocado to your meal prep containers. Add avocado, egg, and protein on the day of consumption.) Drizzle dressing over all ingredients and toss to combine.
Healthy Tip: Chop veggies, make dressing and cook your protein ahead and this salad will come together for a bright refreshing meal in minutes!
